In Spring’s Honor, A Gluten Free Soup

Welcome, Spring! I created this soup for you because, yesterday, it was rainy and a little chilly here. I needed something bright and cheery to keep me warm. After going gluten and dairy free, I developed an intense friendship with Asian foods. When I crave something, it is usually a little spicy with a hint of curry. I don’t mean traditional Chinese cuisine, which relies heavily on regular soy sauce (which we can’t have,) but instead Thai and Vietnamese foods. After a long day, these rice based cuisines soothe my weary gf soul.

Without further ado, I bring you:

Asian inspired gluten free soup

Asian Inspired Spring Soup

One whole Chicken, cooked in salted and peppered water, and de-boned. I really like Smart Chicken. Chop up the meat into bite sized pieces.

Into the remaining broth add:

Two cups of gf noodles.I used Tinkyada penne. Cook the noodles until al dente. You may need to add some packaged broth to the soup if the noodles soak up too much. I use Pacific brand. Right on the package it states gluten free. You gotta like that.

Once the noodles are al dente, add:

One bunch of green onions, sliced

One pkg. Enoki mushrooms, bottom of stems removed; if you can’t find Enoki, try baby portabellas sliced in half

One bunch of asparagus sliced in one inch pieces

One to Two Tablespoons Thai Kitchen Green Curry; and

One pkg. frozen petite peas

Let simmer with the chopped chicken.Serve hot with homemade gluten free bread and perhaps, a cheese course if you can eat it.

For our daily bread, I used Bobs Red Mill Gluten Free Homemade Wonderful Bread Mix because I didn’t have time to make bread from scratch.

Was it good? Let’s just say there were no leftovers.

    Jayme, yes it is. GF is no longer taste free, and with better products entering the market everyday, it’s getting easier and easier to eat.~~Dee

    What great wholesome looking soup. I could definitely do with a bowl of this, accompanied by some of that lovely bread. It has been absolutely freezing here over the weekend. I hope you are having a lovely Easter, nice daffodil. x

    Gosh, I love soups! I like colorful food– to see the colors all swirling in soups. I have not used curry but you inspire me to give it a try. I’ve been using DeBolle’s (spelling?) brand gf noodles because Jim is tickled to buy them at Walmart. 🙂

    Your recipe sounds delicious! I could have used some of this when my head was so blocked up this past week.

    I enjoyed reading your posts about roses … thanks for the tip about not pruning climbers until after they’ve bloomed. Maybe I will have a better bloom season from both of my climbing roses.

    Dear Dee

    Since I had to give up gluten and wheat, I’ve taken to papadums.

    Also, have you come across a grain called ‘Quinoa’ it’s quicker than rice – and has more flavour.

    (Though I still like rice too.)

    (Though not rice cakes!)

    Esther, I really love quinoa. I use the flour in a mix too. I’ve never tried papadums. Don’t know what those are. I’ll have to google it! I dislike rice cakes intensely.~~Dee

    The soup sounds yummy…I am going to try it! Love those Tinkyada noodles, in all shapes and forms. I have been gluten free for over 8 years now. I can tolerate a small amount of dairy on occasion.
    Did you know that San-J makes a great gluten free organic soy sauce? I would hate to be without it for seasoning dishes.

    Hi, Dee, I like curry, too! I often use lentils, onion, garlic and curry together, maybe with a bit of turmeric and sometimes a potato chopped up in it all. Lovely for cool weather!

    If I could stop eating dairy, I’d probably dump another ten pounds! The soup looks delish! I didn’t cook a darned thing today. Went outside with the hounds (Yorkies) and ended up weeding when I just intended to step outside a minute. So I was too tired to do anything other than have an organic peanutbutter and jelly sandwich. I’d have liked to have had your soup though.
